Homemade Cheddar Broccoli Soup


Be hold everybody!! Ezzy's photography's first Online recipe!

As some of you might know I love cooking and creating my own concoctions.. never keep recipes so bear with me here.. I'll show you how I made this amazing really fun and tasty Broccoli soup.
You'll be so happy you gave it a try your kids will eat the spoon and the plate!

I don't know if you were paying attention but I said I never keep recipes nor I ever follow them so everything here is measure with my eyes and hope you develop your very own x-ray measuring vision.

Let's get started..

Ingredients you'll need (servings for 2):

1 Broccoli head
1/2 a red onion
Butter
Milk
Heavy cream
White aged cheddar cheese
Salt 
Pepper
Oregano

(this already looks like a recipe)


Cut half of the onion and cut the broccoli stems so you can wash the broccoli head..


Throw your onions to a sauté pan (fancy for throw your onions to a frying pan) I used butter so they get a lot more flavor, season with salt pepper and garlic, I used garlic powder.. Leave for a little while until they start getting golden.. look at the picture! Exercise your measuring vision!


In another pan blanch your broccoli for until you notice the water starting to boil.. then take the cute greener broccolis out right away!
Now your onions are done, take them out with a spoon and throw them in your food processor. Leave the melted butter left over in the pan as we are to sauté  the broccolis the same way until you get them cooked all the way and they show slight brown golden spots.
Pour some milk on the pan so the milk soaks all the flavors.. I would say like a cup and a half.. Leave simmer for like 2 minutes...


Cut some white cheddar cheese and add it to the pan... Is up to you how much cheese you'd like to add.. But don't hold me responsible if you end up making a cheese broccoli dip instead of broccoli soup...


Used this cheese.. pretty good.


Now as you can see throw everything in the food processor... don't forget about the onions! add more milk if you need to. This is where I added around half a cup of heavy cream.. oh! add a tiny sprinkle of oregano for flavoring.
Process the living hell out of these goodies and it will leave a nice texture, you'll have tiny pieces of broccoli to chew. If you don't want texture in your soup then use a blender you big baby...


Voilá!! Soup is ready!

Caracas Arepa Bar



After a day of hard working and meeting with clients, I decided to take my wife for a small, cute and different dinner so we went to Caracas Arepa Bar. The Best arepas in the City! If you dont know what arepas are.. Well they are Venezuelan crispy corn meal tortillas like, very fluffy in the middle and stuffed with your choice of filling, Shredded beef, chorizo, etc. finished up with some traditional cheese and their signature spicy sauce.. YUM!!



For dessert we had a nice little Tres leches cake with coconut... Very Good!
Highly Recommended and prices are Great!

Red Mango on 14th st

Relaxing and doing a little work on the laptop a Coffee and a nice Frozen Yogurt with all the toppings sounds Perfect!

Cute little place between 14th st and 6th Ave. Of Course NEW YORK..
